Abstract:
The provenance and interaction of Photobacterium (P.) with other meat spoiling bacteria was studied. The study revealed an ubiquitous distribution on spoiling meat and species-specific differences in adaptation and interaction. Growth and transcriptomic profiles of P. phosphoreum and P. carnosum were differentially influenced by the combination of co-contaminants and packaging atmosphere. Despite of their different strategies, both species successfully integrated into the spoilage consortium.
