Abstract:
This thesis investigates the development of a plant-based yogurt alternative taking lupin protein as raw material. The exopolysaccharide producing strains Lactobacillus plantarum and Pediococcus pentosaceus were identified as suitable starter cultures regarding growth performance, yogurt-like texture and aroma. The intensity of the heat treatment of the milk alternative was decisive for the gel firmness, susceptibility to syneresis and the gel network formation of respective yogurt alternatives, as the degree of protein denaturation and disulfide crosslinking increased.

Diese Arbeit untersucht die Entwicklung einer pflanzen-basierten Joghurtalternative am Beispiel von Lupinenproteinen als Rohmaterial. Die Exopolysaccharid-produzierenden Stämme Lactobacillus plantarum und Pediococcus pentosaceus wurden hinsichtlich Wachstumsleistung, joghurttypischer Textur und Aroma als geeignete Starterkulturen identifiziert. Die Intensität der Wärmebehandlung der Milchalternative war ausschlaggebend für die Gelfestigkeit, Synäreseanfälligkeit und die Gelnetzwerk-Bildung der resultierenden Joghurtalternativen, da der Grad an Proteindenaturierung und Disulfidvernetzung zunahm.
