- Abstract:
- Der Stoffwechsel der für die Getränkeindustrie relevanten Hefen Saccharomyces cerevisiae S81 und Saccharomyces pastorianus S23 wurde mittels massenspektrometrischer Techniken untersucht. Durch eine methodische Anpassung des Fermentationsmediums lassen sich die Aufnahme von Aminosäuren, deren Metabolismus sowie die Bildung von Aromastoffen gezielt beeinflussen. Zudem wurden grundlegende Erkenntnisse zur anabolen und katabolen Bildung flüchtiger Derivate von Leucin und Phenylalanin gewonnen.

- The metabolism of the yeasts Saccharomyces cerevisiae S81 and Saccharomyces pastorianus S23, which are relevant for the beverage industry, was investigated using mass spectrometric techniques. By methodically adapting the fermentation medium, the uptake of amino acids, their metabolism and the formation of aroma compounds can be specifically influenced. In addition, fundamental insights were gained into the anabolic and catabolic formation of volatile derivatives of leucine and phenylalanine.
