Thermal denaturation kinetics of whey proteins at high protein concentrations
Abstract:
A detailed kinetic study of the thermal reaction kinetics of whey protein concentrate was conducted at high protein concentrations. Whey protein solutions with protein concentrations of up to 40{%} (w/w) were heated at different temperatures for varying periods of times. The denaturation of b-lactoglobulin followed a reaction order of 1.5 and depended strongly on temperature and protein concentration.
