Abstract:: The selective fractionation of functional peptides during conventional filtration can be improved by superimposing an electrical field. Therefore, electrolytic parameters, mass flow of protein as well as the amount of target peptides in the permeate were analyzed in order to study the effect of peptide fractionation. It was found that the position of the electrodes in combination with the electrical charges of the peptides is a decisive factor for a successful fractionation.
