The extraction, isolation and modification of proteins from residual materials of the rapeseed industry was studied in regard to their application in the technical industry. Mild seed processing during defatting proved to be essential for high protein isolation yields. Protein content and functionality of protein preparations were determined by the isolation process, i.e. ultrafiltration or combined acidic precipitation/ ultrafiltration. Protein modification served as a promising tool to increase the application potential of rapeseed proteins for the technical industry.
