Das Ziel dieser Arbeit war die Untersuchung des Inaktivierungsmechanismus während der Trocknung eines bedeutenden Milchsäurebakteriums Lactobacillus helveticus sowie des Schutzmechanismus ausgewählter Schutzstoffe. Während der Vakuumtrocknung nimmt die Zellvitalität mit der Trocknungszeit ab. Die größte Abnahme tritt auf, wenn sich der Wassergehalt der Zellen von 0,5 auf 0,3 g H2O/g Trockengewicht verringert. Die Abnahme der Zellvitalität war hauptsächlich durch die Schädigung der Zellmembran bedingt. Durch den Zusatz von Sorbit konnte eine Erhöhung der Überlebensrate erreicht werden. Die Schutzwirkung scheint auf der Wechselwirkung zwischen Sorbit und der Zellmembran zu basieren, des Weiteren bewirkt Sorbit eine Änderung der Membranfettsäuren-zusammensetzung.
