Abstract:
Im Rahmen dieser Arbeit konnten erste wichtige Erkenntnisse bezüglich der oralen Wahrnehmung von Nahrungsfetten gewonnen werden. So spielt die lipolytische Aktivität, sezernierter Lipasen aus humanen Speicheldrüsen, eine entscheidende Rolle. Darüber hinaus konnte die Bedeutung einer lipidähnlichen Textur zur Wahrnehmung eines Fettgeschmacks aufgezeigt werden.
Translated abstract:
Whithin the scope of this thesis, first important findings concerning the oral perception of dietary fats could be gained. So the lipolytic activity of secreted lipases from human salivary glands plays a decisive role. In addition the importance of a lipid-like texture for the perception of fat taste could be demonstrated.
