Abstract:
Kinetics of lysine loss were studied in an infant formula model system containing skim milk powder, lactose and whey protein isolate as reactive compounds. The model system with water activities of 0.33, 0.53 and 0.75 was heated at different temperatures (60, 70 and 80 °C) for different heating times (0.5, 5, 10, 15, 20, 25 and 30 min).
