Gegenstand der Promotion ist die Formulierung eines Simulationswerkzeuges zur effizienteren Führung eines Würzebereitungsprozesses. Hierfür müssen die Kinetiken der Bildung und der Ausdampfung der aromatischen Leitkomponente Dimethylsulfid (DMS) bestimmt werden. Weiterhin müssen die verschiedenen Prozessformen der Würzebereitung in Differentialgleichungen erfasst und beschrieben werden. Der Erfolg dieses Forschungsvorhabens äußert sich dergestalt, dass neben kinetischen und Gleichgewichtsdaten von DMS in Wasser die Würzebereitung an sich sudindividuell geführt werden kann.     «

The content of the dissertation consists in the formulation of a simulation tool fort he efficient control of a wort production process. Therefore the kinetics of creation and vaporisation of the most important brewing flavour Dimethyl sulfide (DMS) has to be looked after. Furthermore the different processes of wort production must be formulated in differential equations. The success of this research project is given that way, that next to kinetics VLE-data of DMS in water the wort production can be controlled and optimized individually for every brew.     «
