Durian, a tropical fruit native to Southeast Asia, is infamous for its strong and unusual odor, combining an intense sulfury with a sweet, fruity note. Using the molecular sensory science concept, 46 odorous compounds were identified in durian, the 20 most potent of which were quantitated by stable isotope dilution assays. Sensory experiments revealed ethyl (2S)-2-methylbutanoate (fruity) and 1-(ethylsulfanyl)ethanethiol (roasted onion) as the key aroma compounds of durian. These two compounds, in aquous solution in their natural concentrations, were able to completely mimic the aroma of durian.
