- Abstract:
- The provenance and interaction of Photobacterium (P.) with other meat spoiling bacteria was studied. The study revealed an ubiquitous distribution on spoiling meat and species-specific differences in adaptation and interaction. Growth and transcriptomic profiles of P. phosphoreum and P. carnosum were differentially influenced by the combination of co-contaminants and packaging atmosphere. Despite of their different strategies, both species successfully integrated into the spoilage consortium.

- Diese Arbeit untersucht die Herkunft und Interaktion von Photobacterium (P.) mit anderen fleischverderbenden Bakterienarten. Photobakterien waren omnipräsent auf Fleisch und zeigten artabhängige Unterschiede in Anpassung und Interaktion. Die Kombination aus Co-Kontamination und Schutzgasatmosphäre beeinflusste das Wachstum von P. phosphoreum und P. carnosum unterschiedlich. Trotz unterschiedlicher Strategien integrierten sich beide Arten erfolgreich in das Verderbskonsortium.
