Abstract:

Flavonoids are an important class of secondary metabolics present in all higher plants. Up to today more than 6400 different compounds are known. Anthocyanins, coloured flavonoids, represent the major pigments in flowers. They confer pink, red, mauve and blue to flowers and attract pollinators. Furthermore, Anthocyanins possess like all the other flavonoids various important properties for plants, such as protection against UV-B radiation and pests. The most prevalent Anthocyanins are characteri...     »
