- Abstract:
- This work explored the role of psychrotrophic, psychrophilic and previously uncultured bacteria in meat spoilage and offers approaches for their detection, and suppression or exploitation towards a retarded spoilage process. The results of this study can initiate a process that enables the reduction of discarded meat in the production and distribution chain, and at the consumer. On long term, millions of tons of carbon dioxide, water, feedstuff and livestock could be saved globally.

- Diese Arbeit hat die Rolle von psychrotrophen, psychrophilen und bisher unkultivierten Bakterien beim Fleischverderb erforscht und Konzepte zu deren Detektion und Unterdrückung bzw. Nutzbarmachung im Sinne eines verzögerten Fleischverderbs entwickelt. Die Ergebnisse dieser Arbeit können einen Prozess initiieren, der es ermöglicht, dass die Menge an weggeworfenem Fleisch in der Produktions- und Vertriebskette sowie beim Konsumenten reduziert wird.
