- Abstract:
- The absolute configurations of chiral beta-mercaptoalkanones were determined. Enantiomers were obtained by lipase-catalyzed hydrolyses of the respective acetylthioalkanones and investigated by 1H-NMR analyses using different derivatizing agents. For a homologous series of 2-mercapto-4-alkanones (C6-C10), the absolute configurations of the enantiomers were assigned, and the impact of the stereochemistry on the sensory properties was investigated via GC/O.

- Die absoluten Konfigurationen chiraler beta-Mercaptoalkanone wurden untersucht. Enantiomere wurden durch enzymkatalysierte Hydrolysen der jeweiligen Acetylthioalkanone gewonnen und mittels 1H-NMR Analysen mit verschiedenen Derivatisierungsreagenzien untersucht. Für eine homologe Reihe von 2-Mercapto-4-alkanonen (C6-C10) wurden die absoluten Konfigurationen bestimmt und der Einfluss der Stereochemie auf die sensorischen Eigenschaften mittels GC/O untersucht.
