Abstract:
Anhand von Struktur/Wirkungs-Untersuchungen zu organischen Säuren und Gingerol-Homologen bezüglich deren gustatorischen bzw. speichelinduzierenden Wirkung konnten erstmals grundlegende Kenntnisse zur Geschmacksstoff-induzierten Speichelstimulation erarbeitet werden. Interessanterweise führten verschiedene oro-sensorische Stimuli auch zu einer massiven Modulation des Speichelproteoms, wobei insbesondere ein Konzentrationsanstieg entzündungshemmender Proteine beobachtet werden konnte.

The present work provides a significant contribution to the understanding of the relationship of taste and salivation at molecular and psychophysical level. On the basis of structure-activity studies of organic acids and gingerol homologues, new knowledge on tastant-induced saliva stimulation could be created. Interestingly, the various oro-sensory stimuli were found to induce a massive modulation of the saliva proteome with significantly increased levels of anti-inflammatory proteins.
